On the 25th of April, Australians and New Zealanders pause to remember the men and women who served and died in war. It's a solemn day, filled with quiet moments, dawn services, and the simple act of pinning a sprig of rosemary to our shirts - a symbol of remembrance that grows wild on the hills of Gallipoli.
Simple, Seasonal, and Symbolic
Here are a few dishes that nod to tradition, make the most of what's in season, and honour the spirit of the day.
Rosemary & Garlic Lamb Roast
Lamb is a classic choice for ANZAC Day - roast a shoulder or leg with olive oil, garlic, and plenty of rosemary. Serve with seasonal roast veg and a fresh mint salsa.
Rosemary Roast Potatoes
Crisp and golden with flecks of rosemary and sea salt. Delicious on their own or as a side to any roast.
Damper with Rosemary & Cheese
This Aussie bush bread gets a fresh twist with chopped rosemary and grated cheddar. Bake it in the oven or over coals if you're feeling adventurous!
Wartime Vegetable Soup
Make a hearty soup with what's in the fridge - carrots, leeks, cabbage, and barley are all great. Add a little rosemary for a comforting flavour lift.
ANZAC Biscuits
A must. Made from rolled oats, coconut, golden syrup and no eggs - these iconic biscuits were sent to soldiers abroad because they travelled well. They still taste like home.
